Text should never look like the top layer. I usually do text right after I put in my render, and then follow with stock work. This way it looks like it's part of the sig instead of slapped on. Also, try not to use the Layer Styles for shadows. If you need to give it some shadow, just brush behind it by hand, or make a clipping mask background from another part of the sig.
